Question: I want to use it as an engine display. Is there ant where I can see the configuration choices. It says over 100 choices but really would like more specific details, pictures of how much data I can fit on the screen at one time.

The information that can be displayed is variable based on what is connected to the NMEA2000 network. I do know of a list that exists that will list all different possible configurations but if you follow this link, https://www.garmin.com/en-US/p/126694, you will see more layout options that can be displayed.
